  10. Made this last night and it was surprisingly good. Fairly cheap and
  11. simple, too.

  13.             COLCANNON
  14.  
  15. 1 lb potatoes (about 4 medium)
  16. 1 lb cabbage, shredded or chopped fine
  17. 1 lg onion, minced
  18. 1/4 c milk
  19. 2 Tablespoons butter
  20. 4 oz cheddar, shredded
  21. salt and pepper
  22.  
  23. Boil potatoes in skins till soft. Set aside till cool. Boil cabbage and
  24. onion in potato water (may have to add more water) for 5 minutes and
  25. drain. Remove and discard skins of potatoes. Mash potatoes with the
  26. butter and milk. Mix the cabbage and onion, and 2/3 of the cheese with
  27. the mashed potatoes. Season with s&p. Spread in a buttered casserole
  28. and top with remaining cheese. Bake in 350 F oven for 25 minutes.
  29. Enjoy. Good with a tomato salad.
